Ingredients
- 1 lb shrimp, peeled and deveined
- 4 medium zucchinis, spiralized into noodles
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 tablespoon lemon juice
- - Salt and pepper to taste
Directions
- - Heat olive oil and butter in a skillet over medium heat, sauté garlic for 1-2 minutes until fragrant, add shrimp, lemon juice, salt, and pepper; cook for 4-5 minutes until pink (145°F/63°C); remove and set aside.
- - Add zoodles to the skillet, sauté for 2-3 minutes until just tender, then mix shrimp back in.
- - Serve 1 cup per portion warm.
