  1. 1 lb shrimp, peeled and deveined
  2. 2 cups canned crushed tomatoes
  3. 1/2 cup crumbled feta cheese
  4. 1 onion , chopped
  5. 2 tablespoons olive oil
  6. 1 teaspoon oregano
  7. - Salt and pepper to taste

Directions

  1. - Heat olive oil in a skillet over medium heat, sauté onion for 3-4 minutes, add shrimp, oregano, salt, and pepper; cook for 4-5 minutes until pink (145°F/63°C).
  2. - Stir in tomatoes, simmer for 10 minutes, then sprinkle feta over the top and cook for 2-3 minutes until slightly melted.
  3. - Serve 1 cup per portion warm.
