  1. 4 salmon fillets (6 oz each)
  2. 2 cups fresh spinach
  3. 1 cup heavy cream
  4. 2 tablespoons olive oil
  5. 1 teaspoon garlic powder

Directions

  1. - Preheat oven to 400°F (200°C).
  2. - Place salmon in a baking dish, drizzle with 1 tablespoon olive oil, season with salt and pepper, and bake for 15-20 minutes until flaky (145°F/63°C).
  3. - Heat remaining oil in a skillet over medium heat, add spinach and sauté for 3-5 minutes until wilted, then stir in cream, garlic powder, salt, and pepper; simmer for 5 minutes until thickened.
  4. - Serve each fillet with 1/4 cup spinach cream sauce warm.
