  2. 2 cups canned diced tomatoes (no sugar added)
  3. 1 onion , chopped
  4. 2 tablespoons olive oil
  5. 1 teaspoon oregano
  6. - Salt and pepper to taste

Directions

  1. - Preheat oven to 400°F (200°C).
  2. - Place cod in a baking dish, top with tomatoes, onion, olive oil, oregano, salt, and pepper; bake for 20-25 minutes until cod is flaky (145°F/63°C).
  3. - Serve each fillet with 1/2 cup tomatoes warm.
