  1. 4 chicken breasts (6 oz each)
  2. 2 cups canned artichoke hearts, drained and quartered
  3. 2 tablespoons olive oil
  4. 1 teaspoon oregano
  5. - Salt and pepper to taste

Directions

  1. - Heat 1 tablespoon olive oil in a skillet over medium heat, season chicken with oregano, salt, and pepper; cook for 6-8 minutes per side until done (165°F/74°C); remove and set aside.
  2. - Add remaining oil and artichokes to the skillet, sauté for 5-7 minutes until warmed through, then return chicken to the pan.
  3. - Serve each breast with 1/2 cup artichokes warm.
