  3. 2 cups carrots, sliced
  4. 1 onion , chopped
  5. 1 cup flour (whole grain if preferred)
  6. 1/2 cup milk
  7. 2 tablespoons olive oil
  8. 1 teaspoon thyme
  9. - Salt and pepper to taste

Directions

  1. - Heat olive oil in a pot over medium heat, sauté onion for 3-4 minutes, add chicken, thyme, salt, and pepper; cook until browned, about 5-7 minutes, then add broth and carrots, simmer for 30 minutes.
  2. - In a bowl, mix flour, milk, salt, and pepper to form a dough; drop spoonfuls into simmering soup, cover, and cook for 15 minutes until dumplings are fluffy.
  3. - Serve 1.5 cups per portion warm.
