  1. 1 lb beef stew meat, cubed
  2. 4 cups beef broth
  3. 2 cups carrots, sliced
  4. 1 onion , chopped
  5. 2 tablespoons olive oil
  6. 4 slices whole grain bread
  7. 1 teaspoon thyme
  8. - Salt and pepper to taste

Directions

  1. - Heat olive oil in a pot over medium heat, sauté onion for 3-4 minutes, add beef, thyme, salt, and pepper; cook until browned, about 5-7 minutes.
  2. - Add broth and carrots, bring to a boil, then simmer for 45-60 minutes until beef and carrots are tender.
  3. - Serve 1.5 cups stew with 1 slice bread per portion warm.
