Ingredients
- 1 lb beef tenderloin
- 1 sheet puff pastry (thawed)
- 2 cups mushrooms, finely chopped
- 1 onion , chopped
- 2 tablespoons olive oil
- 1 egg , beaten
- - Salt and pepper to taste
Directions
- - Heat 1 tablespoon olive oil in a skillet over medium heat, season beef with salt and pepper, sear for 2-3 minutes per side; set aside to cool.
- - In the same skillet, sauté onion and mushrooms with remaining oil for 5-7 minutes until soft, let cool.
- - Roll out puff pastry, spread mushroom mixture over it, place beef in the center, wrap tightly, brush with egg, and bake at 400°F (200°C) for 35-40 minutes until pastry is golden and beef reaches 135°F (57°C) for medium-rare.
- - Slice and serve warm.
Storage
Refrigerate in an airtight container for up to 2 days. Reheat in oven.
