Ingredients

  1. 1 lb beef tenderloin
  2. 1 sheet puff pastry (thawed)
  3. 2 cups mushrooms, finely chopped
  4. 1 onion , chopped
  5. 2 tablespoons olive oil
  6. 1 egg , beaten
  7. - Salt and pepper to taste

Directions

  1. - Heat 1 tablespoon olive oil in a skillet over medium heat, season beef with salt and pepper, sear for 2-3 minutes per side; set aside to cool.
  2. - In the same skillet, sauté onion and mushrooms with remaining oil for 5-7 minutes until soft, let cool.
  3. - Roll out puff pastry, spread mushroom mixture over it, place beef in the center, wrap tightly, brush with egg, and bake at 400°F (200°C) for 35-40 minutes until pastry is golden and beef reaches 135°F (57°C) for medium-rare.
  4. - Slice and serve warm.
