Ingredients
- 1 lb ground beef
- 12 oz whole grain spaghetti
- 2 cups marinara sauce
- 1 egg
- 1/4 cup breadcrumbs (whole grain)
- 1 onion , chopped
- 2 tablespoons olive oil
- - Salt and pepper to taste
Directions
- - Cook spaghetti in a large pot of boiling water according to package instructions (usually 10-12 minutes), drain, and set aside.
- - In a bowl, mix beef, egg, breadcrumbs, salt, and pepper; form into 16 meatballs. Heat 1 tablespoon olive oil in a skillet over medium heat, cook meatballs for 8-10 minutes until browned, then bake at 375°F (190°C) for 15 minutes until done (160°F/71°C).
- - In the skillet, sauté onion with remaining oil for 3-4 minutes, add marinara, and simmer with meatballs for 10 minutes. Serve 1 cup spaghetti with 4 meatballs per portion warm.
