Ingredients
- 1 cup cauliflower, riced
- 1/4 cup shredded cheddar cheese
- 1 large egg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- Preheat oven to 400°F.
- Rice the cauliflower in a food processor or by grating, then squeeze out excess moisture.
- In a bowl, mix cauliflower, cheddar, egg, salt, and pepper, then form into 8 small tots.
- Place on a baking sheet and bake for 15-20 minutes until golden, flipping halfway, then serve 4 tots per portion warm.
