  1. 8 ounces salmon fillet
  2. 2 cups spinach, fresh
  3. 1 tablespoon olive oil
  4. 1 teaspoon lemon juice
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon black pepper

Directions

  1. In a medium skillet over medium heat, heat 1/2 tablespoon olive oil.
  2. Season salmon with salt and pepper, then cook for 4-5 minutes per side until flaky (internal temperature 145°F).
  3. In a medium bowl, toss spinach with remaining olive oil and lemon juice.
  4. Divide spinach into two bowls, top each with half the salmon, and serve warm or chilled.
