Ingredients
- 8 ounces salmon fillet
- 1 cup asparagus, trimmed
- 2 cups mixed greens
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- In a medium skillet over medium heat, heat 1/2 tablespoon olive oil.
- Season salmon with salt and pepper, cook for 4-5 minutes per side until flaky (internal temperature 145°F), then remove to a plate.
- In the same skillet, add asparagus and sauté until tender, about 5-7 minutes.
- In a medium bowl, toss mixed greens with remaining olive oil and lemon juice.
- Divide greens into two bowls, top each with half the salmon and asparagus, and serve warm or chilled.
Storage
Refrigerate components separately in airtight containers for up to 3 days. Assemble fresh before eating.
