  2. 1/2 cup fresh parsley, chopped
  3. 2 cloves garlic, minced
  4. 1/4 cup olive oil
  5. 1 tablespoon red wine vinegar

Directions

  1. - Preheat grill pan to medium-high heat.
  2. - Season steaks with salt, pepper, and 1 tablespoon olive oil; grill for 5-7 minutes per side until desired doneness (135°F/57°C for medium-rare).
  3. - In a bowl, mix parsley, garlic, remaining olive oil, vinegar, salt, and pepper to make chimichurri.
  4. - Serve each steak with 2 tablespoons chimichurri warm.
