  1. 1 lb ham, diced
  2. 4 cups potatoes, diced
  3. 1 cup shredded cheddar cheese
  4. 1/2 cup heavy cream
  5. 1 onion , chopped
  6. 2 tablespoons olive oil
  7. - Salt and pepper to taste

Directions

  1. - Preheat oven to 375°F (190°C).
  2. - Heat olive oil in a skillet over medium heat, sauté onion for 3-4 minutes, add ham and potatoes, cook for 5-7 minutes until lightly browned.
  3. - Transfer to a baking dish, pour cream over the top, sprinkle with cheese, and bake for 35-40 minutes until potatoes are tender and cheese is bubbly.
  4. - Serve 1 cup per portion warm.
