  1. 1 lb chicken breast, cubed
  2. 2 medium zucchinis, spiralized into noodles
  3. 4 cups chicken broth
  4. 1 onion , chopped
  5. 2 tablespoons olive oil
  6. 1 teaspoon thyme
  7. - Salt and pepper to taste

Directions

  1. - Heat olive oil in a pot over medium heat, sauté onion for 3-4 minutes, add chicken, thyme, salt, and pepper; cook until browned, about 5-7 minutes.
  2. - Add broth, bring to a boil, then simmer for 20 minutes; stir in zoodles and cook for 2-3 minutes until just tender.
  3. - Serve 1.5 cups per portion warm.
