Ingredients
- 1 lb chicken breast, sliced
- 4 medium zucchinis, spiralized into noodles
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- - Salt and pepper to taste
Directions
- - Heat 1 tablespoon olive oil in a skillet over medium heat, add chicken, season with garlic powder, salt, and pepper, and cook for 8-10 minutes until done (165°F/74°C); remove and set aside.
- - In the same skillet, add cream and Parmesan, simmer for 5 minutes until thickened, then mix in chicken.
- - Heat remaining oil in another skillet, sauté zoodles for 2-3 minutes until just tender, top with sauce and chicken, and serve 1 cup per portion warm.
