  1. 4 ounces turkey sausage, ground (sugar-free for Whole30)
  2. 4 large eggs, beaten
  3. 1 cup spinach, chopped
  4. 1 tablespoon olive oil
  5. 1/4 teaspoon salt

Directions

  1. In a medium skillet over medium heat, heat olive oil.
  2. Add turkey sausage and cook, breaking it apart with a spatula, until browned and cooked through, about 8-10 minutes (internal temperature should reach 165°F).
  3. Push sausage to one side of the skillet, add spinach, and sauté until wilted, about 2 minutes.
  4. In a small bowl, whisk eggs with salt and pepper, then pour into the skillet.
  5. Scramble eggs with sausage and spinach over medium heat, stirring occasionally, until fully cooked, about 3-4 minutes.
  6. Divide into two bowls and serve hot, optionally garnished with fresh herbs.
