  1. 2 whole grain tortillas (gluten-free for Gluten-Free tag)
  2. 4 ounces sliced turkey breast
  3. 1/2 cup cucumber, thinly sliced
  4. 1/2 cup bell pepper, sliced
  5. 1 tablespoon olive oil
  6. 1 teaspoon lemon juice
  7. 1/4 teaspoon salt
  8. 1/4 teaspoon black pepper

Directions

  1. In a small bowl, toss cucumber and bell pepper with olive oil, lemon juice, salt, and pepper.
  2. Place 2 ounces turkey and half the veggie mixture in each tortilla.
  3. Roll up tightly and serve fresh.
