  1. 8 ounces shrimp, peeled and deveined
  2. 1 cup cabbage, shredded
  3. 1/2 cup apple, julienned
  4. 1 tablespoon olive oil
  5. 1 tablespoon mayonnaise
  6. 1 teaspoon lemon juice
  7. 1/4 teaspoon salt
  8. 1/4 teaspoon black pepper

Directions

  1. In a medium skillet over medium heat, heat olive oil, add shrimp, salt, and pepper, and cook until pink, about 3-5 minutes (internal temperature 145°F).
  2. In a medium bowl, mix cabbage, apple, mayonnaise, and lemon juice to make the slaw.
  3. Top slaw with cooked shrimp, divide into two portions, and serve 1 cup per portion fresh.
