Ingredients
- 8 ounces shrimp, peeled and deveined
- 1 cup cabbage, shredded
- 1/2 cup apple, julienned
- 1 tablespoon olive oil
- 1 tablespoon mayonnaise
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- In a medium skillet over medium heat, heat olive oil, add shrimp, salt, and pepper, and cook until pink, about 3-5 minutes (internal temperature 145°F).
- In a medium bowl, mix cabbage, apple, mayonnaise, and lemon juice to make the slaw.
- Top slaw with cooked shrimp, divide into two portions, and serve 1 cup per portion fresh.
Storage
