Ingredients

  1. 4 ounces raw sushi-grade salmon, thinly sliced
  2. 1 cup cooked sushi rice
  3. 2 nori sheets
  4. 1/4 cup cucumber, julienned
  5. 1 tablespoon soy sauce (or tamari for gluten-free)
  6. 1 teaspoon rice vinegar

Directions

  1. - Mix sushi rice with rice vinegar.
  2. - Place a nori sheet on a sushi mat, spread 1/2 cup rice evenly, add salmon and cucumber in a line, and roll tightly using the mat.
  3. - Slice into 4 pieces, repeat with the second nori sheet, and serve with soy sauce, 4 rolls per portion.
