  1. 8 ounces boneless chicken breast
  2. 2 cups romaine lettuce, chopped
  3. 1 tablespoon olive oil
  4. 2 tablespoons low-fat Caesar dressing
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon black pepper

Directions

  1. In a medium skillet over medium heat, heat olive oil.
  2. Season chicken with salt and pepper, cook for 5-7 minutes per side until browned (internal temperature 165°F), then slice.
  3. In a medium bowl, toss romaine lettuce with low-fat Caesar dressing.
  4. Divide lettuce into two bowls, top each with half the sliced chicken, and serve fresh.
