Directions

  1. In a medium skillet over medium heat, heat olive oil.
  2. Add chicken liver, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes (internal temperature 165°F).
  3. Stir in spinach and cook until wilted, about 2-3 minutes.
  4. Divide into two bowls and serve hot.
