Ingredients
- 2 cans (5 oz each) tuna, drained
- 1 egg
- 2 tablespoons almond flour
- 4 cups mixed greens
- 1 onion , chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- - Salt and pepper to taste
Directions
- - In a bowl, mix tuna, egg, almond flour, half the onion, salt, and pepper; form into 8 patties.
- - Heat 1 tablespoon olive oil in a skillet over medium heat, cook patties for 4-5 minutes per side until golden.
- - Toss greens with remaining oil, lemon juice, remaining onion, salt, and pepper; serve 2 patties with 1 cup salad per portion warm or chilled.
Storage
Refrigerate patties and salad separately for up to 2 days. Reheat patties on stovetop or microwave.
