  1. 1 lb shrimp, peeled and deveined
  2. 4 cups fresh spinach, chopped
  3. 2 tablespoons olive oil
  4. 1 teaspoon dried dill
  5. - Salt and pepper to taste

Directions

  1. - In a large skillet over medium-high heat, heat 1 tablespoon olive oil and cook shrimp with dill, salt, and pepper for 4-5 minutes until pink (145°F/63°C); remove and set aside.
  2. - Add remaining oil and spinach; sauté for 3-5 minutes until wilted, then mix in shrimp.
  3. - Serve warm.
