  1. 1 lb shrimp, peeled and deveined
  2. 4 cups carrots, sliced
  3. 4 cups chicken broth (low-FODMAP)
  4. 1 tablespoon olive oil
  5. 1 teaspoon dried dill

Directions

  1. - In a large pot over medium heat, heat olive oil and sauté carrots for 5 minutes.
  2. - Add broth, dill, salt, and pepper; bring to a boil, then simmer for 15 minutes; add shrimp and cook for 4-5 minutes until pink (145°F/63°C).
  3. - Serve hot in bowls.
