  1. 1 lb ground beef
  2. 1 large head cauliflower, cut into florets
  3. 1 cup shredded cheddar cheese
  4. 1 onion , chopped
  5. 2 tablespoons olive oil
  6. 1 teaspoon garlic powder
  7. - Salt and pepper to taste

Directions

  1. - Preheat oven to 375°F (190°C).
  2. - Boil cauliflower florets in a pot of water for 5-7 minutes until tender, drain, mash with 1 tablespoon olive oil, salt, and pepper, and set aside.
  3. - Heat remaining oil in a skillet over medium heat, sauté onion for 3-4 minutes, add beef, garlic powder, salt, and pepper; cook until browned, about 8-10 minutes.
  4. - Transfer beef mixture to a baking dish, top with mashed cauliflower and cheese, and bake for 25-30 minutes until golden.
  5. - Serve 1 cup per portion warm.
