Ingredients
- 1 lb beef stew meat, cubed
- 4 cups carrots, sliced
- 4 cups beef broth
- 1 onion , chopped
- 2 tablespoons olive oil
- 1 teaspoon thyme

Directions
- - Heat olive oil in a pot over medium heat, sauté onion for 3-4 minutes, add beef, thyme, salt, and pepper; cook until browned, about 5-7 minutes.
