  1. 1 cup sweet potato, peeled and diced
  2. 2 cups spinach, chopped
  3. 1 tablespoon olive oil
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon black pepper

Directions

  1. In a medium skillet over medium heat, heat olive oil.
  2. Add diced sweet potato and cook, stirring occasionally, until tender, about 10-12 minutes.
  3. Add chopped spinach, season with salt and pepper, and sauté until wilted, about 2-3 minutes.
  4. Divide into two bowls and serve hot.
