Sausage and Spinach Omelette

  1. 4 large eggs, beaten
  2. 4 ounces sausage, ground (sugar-free for Whole30)
  3. 1 cup spinach, chopped
  4. 1 tablespoon olive oil
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon black pepper

Directions

  1. In a medium skillet over medium heat, heat olive oil.
  2. Add sausage and cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes (internal temperature 160°F).
  3. Add chopped spinach and sauté until wilted, about 1-2 minutes.
  4. Pour beaten eggs into the skillet, season with salt and pepper, and cook until edges set, about 2-3 minutes.
  5. Fold omelette in half with a spatula and cook for 1-2 minutes more until fully set.
  6. Cut in half, place each half on a plate, and serve hot.
