Ingredients
- 1/2 cup quinoa, rinsed
- 1 cup water
- 1 apple , cored and diced
- 2 tablespoons almonds, chopped
- 1/4 teaspoon cinnamon
Directions
- In a medium saucepan over medium heat, bring water to a boil.
- Add quinoa, reduce heat to low, cover, and simmer for 12-15 minutes until tender and water is absorbed.
- Remove from heat, stir in cinnamon, and divide into two bowls.
- Top each bowl with half the diced apple and 1 tablespoon chopped almonds.
- Serve warm or at room temperature.
Storage
Refrigerate in an airtight container for up to 4 days. Serve cold or reheat lightly.
