Ingredients
- 1/2 cup quinoa, rinsed
- 1 cup water
- 1/4 cup black olives, sliced
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- - In a medium saucepan, bring water to a boil, add quinoa, reduce heat to low, cover, and simmer for 12-15 minutes until tender.
- - Toss cooked quinoa with olives, olive oil, lemon juice, salt, and pepper.
- - Divide into two bowls and serve warm or chilled.
