  1. 1/2 cup quinoa, rinsed
  2. 1 cup water
  3. 2 cups kale, chopped
  4. 1 tablespoon olive oil
  5. 1 teaspoon garlic, minced
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon black pepper

Directions

  1. - In a medium saucepan, bring water to a boil, add quinoa, reduce heat to low, cover, and simmer for 12-15 minutes until tender.
  2. - In a large skillet over medium heat, heat olive oil, add garlic, and sauté for 1 minute.
  3. - Add kale, salt, and pepper, sautéing until wilted, about 5 minutes.
  4. - Toss quinoa with kale, divide into two bowls, and serve warm.
