  3. 1/4 cup almond flour
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon black pepper

Directions

  1. - In a large bowl, toss chicken thighs with almond flour, salt, and pepper to coat.
  2. - In a large skillet over medium heat, melt pork fat.
  3. - Add chicken and cook for 8-10 minutes per side until golden and cooked through (internal temperature 165°F).
  4. - Serve 4 ounces per portion warm.
