  1. 8 ounces boneless chicken breast
  2. 1/2 cup couscous (whole wheat if available)
  3. 1 cup water
  4. 1 tablespoon olive oil
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon black pepper

Directions

  1. In a small saucepan over medium heat, bring water to a boil, add couscous, reduce heat to low, cover, and simmer for 8-10 minutes until tender, then fluff with a fork.
  2. Preheat grill pan or outdoor grill to medium-high heat.
  3. Brush chicken with olive oil, season with salt and pepper, and grill for 6-8 minutes per side until cooked through (internal temperature 165°F).
  4. Slice chicken, divide couscous onto two plates, top each with half the chicken, and serve hot.
