  1. 8 ounces white fish fillet (e.g., cod)
  2. 1 cup potatoes, cut into fries
  3. 1/4 cup all-purpose flour
  4. 1 large egg, beaten
  5. 1/2 cup breadcrumbs

Directions

  1. - Preheat oven to 400°F.
  2. - Toss potato fries with 1 tablespoon olive oil, salt, and pepper, spread on a baking sheet, and bake for 20 minutes until crispy, flipping halfway.
  3. - Meanwhile, dredge fish in flour, dip in egg, then coat with breadcrumbs. In a large skillet over medium heat, heat remaining olive oil and fry fish for 3-4 minutes per side until golden (internal temperature 145°F).
  4. - Serve fish with fries, 1 plate per portion, warm.
