  1. 1/2 cup brown rice, rinsed
  2. 1 cup water
  3. 1 cup asparagus, trimmed and cut into 2-inch pieces
  4. 1 tablespoon olive oil
  5. 1/4 teaspoon salt

Directions

  1. - In a medium saucepan, bring water to a boil, add brown rice, reduce heat to low, cover, and simmer for 20-25 minutes until tender.
  2. - In a medium skillet over medium heat, heat olive oil, add asparagus, salt, and pepper, sautéing until tender, about 5-7 minutes.
  3. - Divide rice onto two plates, top with asparagus, and serve warm.
