  1. 2 cups broccoli florets
  2. 2 tablespoons almonds, sliced
  3. 1 tablespoon olive oil
  4. 1 teaspoon lemon juice
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon black pepper

Directions

  1. In a medium pot, bring water to a boil, add broccoli, and blanch for 3-5 minutes until tender-crisp, then drain and cool.
  2. In a medium bowl, toss broccoli and almonds with olive oil, lemon juice, salt, and pepper until well combined.
  3. Divide into two bowls and serve fresh.
