  1. 4 cups bone broth (low-sodium for DASH)
  2. 1 cup carrots, chopped
  3. 1 tablespoon olive oil
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon black pepper

Directions

  1. In a large pot over medium heat, bring water to a boil, add carrots, and cook until tender, about 10-15 minutes, then drain.
  2. In a blender or food processor, puree carrots with olive oil, salt, and pepper until smooth.
  3. Heat bone broth in the pot over medium heat, stir in carrot puree, and simmer for 5 minutes to blend flavors.
  4. Divide into four bowls and serve hot.
