Ingredients

  1. 8 ounces ground beef
  2. 1 tablespoon olive oil
  3. 1 teaspoon chili powder
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon black pepper
  6. 2 cups lettuce, shredded
  7. 1/2 cup cherry tomatoes, halved

Directions

  1. In a medium skillet over medium heat, heat olive oil.
  2. Add ground beef, chili powder, salt, and pepper, cooking and breaking it apart with a spatula until browned, about 5-7 minutes (internal temperature 160°F).
  3. Divide lettuce into two bowls, top each with half the beef and cherry tomatoes, and serve warm.
