  1. 8 ounces beef stew meat, diced
  2. 1 cup carrots, sliced
  3. 4 cups beef broth (low-sodium)
  4. 1 tablespoon olive oil
  5. 1/4 teaspoon salt

Directions

  1. - In a large pot over medium heat, heat olive oil, add beef, and cook until browned, about 5-7 minutes (internal temperature 160°F).
  2. - Add carrots, beef broth, salt, and pepper, bring to a boil, then reduce heat to low and simmer for 30-35 minutes until beef is tender.
  3. - Divide into four bowls and serve hot.
