  1. 12 oz whole grain pasta
  2. 2 lbs fresh clams, scrubbed
  3. 1 onion , chopped
  4. 4 cloves garlic, minced
  5. 2 tablespoons olive oil
  6. 1/2 cup chicken broth
  7. - Salt and pepper to taste

Directions

  1. - Cook pasta in a large pot of boiling water according to package instructions (usually 10-12 minutes), drain, and set aside.
  2. - Heat olive oil in a skillet over medium heat, sauté onion and garlic for 3-4 minutes, add clams and broth, cover, and cook for 5-7 minutes until clams open (discard any that don't).
  3. - Toss pasta with clam mixture and serve 1 cup per portion warm.
