  1. 4 cod fillets (6 oz each)
  2. 2 cups canned chickpeas, rinsed and drained
  3. 1/4 cup red onion, chopped
  4. 2 tablespoons olive oil
  5. 1 tablespoon lemon juice
  6. 1 teaspoon oregano
  7. - Salt and pepper to taste

Directions

  1. - Preheat oven to 400°F (200°C).
  2. - Place cod in a baking dish, drizzle with 1 tablespoon olive oil, season with oregano, salt, and pepper; bake for 15-20 minutes until flaky (145°F/63°C).
  3. - In a bowl, mix chickpeas, onion, remaining oil, lemon juice, salt, and pepper to make salad.
  4. - Serve each fillet with 1/2 cup salad warm or chilled.
