  2. 2 apples , shredded
  3. 2 cups cabbage, shredded
  4. 2 tablespoons olive oil
  5. 1 tablespoon apple cider vinegar
  6. 1 teaspoon thyme

Directions

  1. - Heat 1 tablespoon olive oil in a skillet over medium heat, season chicken with thyme, salt, and pepper; cook for 6-8 minutes per side until done (165°F/74°C); slice and set aside.
  2. - In a bowl, mix apples, cabbage, remaining oil, vinegar, salt, and pepper to make slaw.
  3. - Serve 1 cup chicken with 1 cup slaw per portion warm or chilled.
