  1. 4 slices turkey bacon
  2. 2 large eggs
  3. 2 slices whole grain bread (gluten-free for Gluten-Free tag)
  4. 1 tablespoon olive oil
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon black pepper

Directions

  1. In a medium skillet over medium heat, heat olive oil.
  2. Add turkey bacon and cook until crispy, about 5-7 minutes, then remove to a plate.
  3. In the same skillet, fry eggs until yolks are set to preference (sunny-side up or over-easy), about 3-5 minutes, seasoning with salt and pepper.
  4. Toast bread slices until golden brown, about 2 minutes in a toaster.
  5. Assemble each sandwich with 2 slices turkey bacon and 1 egg between 1 slice of toast, and serve hot.
