Ingredients
- 4 slices turkey bacon, chopped
- 1 cup sweet potato, peeled and diced
- 1 cup zucchini, diced
- 1/2 cup bell pepper, diced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- In a large skillet over medium heat, heat olive oil.
- Add turkey bacon and cook until crispy, about 5-7 minutes, then remove to a plate.
- In the same skillet, add sweet potato, zucchini, and bell pepper, season with salt and pepper, and cook, stirring occasionally, until tender, about 8-10 minutes.
- Return bacon to the skillet, stir to combine, and cook for 1 minute more.
- Divide into two bowls and serve hot.
Storage
