Ingredients
- 4 slices turkey bacon
- 2 large eggs
- 2 slices whole grain bread
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- In a medium skillet over medium heat, heat olive oil.
- Add turkey bacon and cook until crispy, about 5-7 minutes, then remove to a plate.
- In the same skillet, fry eggs until yolks are set to preference (sunny-side up or over-easy), about 3-5 minutes, seasoning with salt and pepper.
- Toast bread slices until golden brown, about 2 minutes in a toaster.
- Assemble each sandwich with 2 slices turkey bacon and 1 egg between 1 slice of toast, and serve hot.
Storage
