Chia Pudding with Pineapple

  1. 1/4 cup chia seeds
  2. 1 cup coconut milk, canned, unsweetened
  3. 1 cup pineapple, diced
  4. 1 tablespoon maple syrup (optional, omit for Whole30)

Directions

  1. In a medium bowl, whisk together chia seeds, coconut milk, and maple syrup (if using) until well combined.
  2. Let sit for 5 minutes, then whisk again to prevent clumping.
  3. Cover and refrigerate overnight (or at least 4 hours) until thickened into a pudding consistency.
  4. Stir pudding, divide into two bowls, and top each with 1/2 cup diced pineapple.
  5. Serve chilled.
