  2. 1 ripe avocado, pitted and scooped
  3. 1 tablespoon olive oil
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon black pepper

Directions

  1. In a medium skillet over medium heat, cook bacon until crispy, about 5-7 minutes, then remove to a plate and crumble.
  2. In a bowl, mash avocado with olive oil, salt, and pepper until smooth.
  3. Divide avocado mixture into two bowls, top each with crumbled bacon, and serve at room temperature or chilled.
