  2. 1 cup water
  3. 1 cup mixed veggies (e.g., zucchini, bell peppers), chopped
  4. 1/4 cup feta cheese, crumbled
  5. 1 tablespoon olive oil

  7. 1/4 teaspoon black pepper

Directions

  1. - In a medium saucepan, bring water to a boil, add quinoa, reduce heat to low, cover, and simmer for 12-15 minutes until tender.
  2. - In a medium skillet over medium heat, heat olive oil, add mixed veggies, salt, and pepper, sautéing until tender, about 5-7 minutes.
  3. - Toss quinoa with veggies and feta, divide into two bowls, and serve warm.
