  3. 1 cup zucchini, diced
  4. 1/2 cup onion, diced
  5. 1 tablespoon olive oil

Directions

  1. In a large pot over medium heat, heat olive oil.
  2. Add ground turkey and onion, cooking until turkey is browned, about 5-7 minutes (internal temperature 165°F).
  3. Stir in zucchini, chicken broth, salt, and pepper, bringing to a boil.
  4. Reduce heat to low, cover, and simmer for 20-25 minutes until zucchini is tender.
